Message I run it in my 240z as those heads have well-known issues with hot spots/spot boiling of coolant due to poor flow and trapped coolant at the back of the head. I have no issues with the engine running hotter, but I changed radiator type at the same time so I have no direct A/B comparison. You will still need an expansion tank if you track the car due to track regulations.
I second the requirement to get all the water out of the cooling system - it is best to convert when you overhaul the engine and have the complete system drained and blown out, including the heater core. They do have a pre-flush that works though it costs more to convert then.
